Happy 4th of July everyone! And what better way than to celebrate with an all-American feast. Okay, I lied, it’s an all-Filipino feast because that’s how my family celebrates any holiday. Christmas, Thanksgiving, Easter, even America’s Independence Day!
This feast was organized by my aunt and uncle who visited my family for Memorial Day, and this is what was on our menu:
A simple salted duck egg (itlog na pula) salad with tomatoes and onions.
Fried tilapia.
Boiled blue crabs (alimasag) that were so damn good!
Sinigang with shrimp.
And just boiled shrimp that they made for me—it’s my favorite!
That’s what America is all about—the melting pot of culture. And… Well, there isn’t much “melting pot”ness here, just straight up Filipino food… But that’s what we are, and that’s why we eat it to celebrate America! Because we can do that here! We can be ourselves and eat the food we loved here and we’re free to be able to do that! So thanks America, for letting us eat salted duck eggs! Happy 4th of July everyone!
